For the longest time, I have admired TECHSOUP.ORG and its e-newsletter, By the Cup. The organization offers nonprofits a one-stop resource for free technology  information, actual computer resources, and support. But, it’s not the website or blog I admire, it’s the e-newsletter offering of soup recipes. It’s become such standard fare that now readers supply the recipes.

I’d like to piggyback on that notion and offer you simple recipe. Once, in my not-so-sordid past, I owned a catering firm. The urge to create in the kitchen hasn’t left me, but the time for creating is limited, at best. I assume every one faces that dilemma, so starting with this holiday season, I am proposing a solution — quickie recipes that can be crafted on short notice.  I do not pretend that I created these recipes. I’ve been using most of them for so long, I don’t even remember how they slipped into my recipe repertoire.  But, now, I gladly pass them along to you with every Pearl Pondering entry. Enjoy!

Easy, Everyday dip
2 – 8 oz. blocs cream cheese
1 small white onion, chopped
Soften cream cheese.  Add chopped onion.  Mix until smooth. Serve with chips,  crackers, or red pepper slices.
